oatmeal arroz caldo, anyone?

along with jogging, i'm trying to adapt a healthy way of eating. i haven't been eating rice, or if i do, i limit myself to up to 3 spoonfulls. i'm eating more veggies too.

preparing a hot breakfast has been a challenge. an omellette is too much work and the only way i can make it really tasty is if i pile up the 'extras' like cheese, mushrooms, bacon, sausage...so that means i'm piling up the calories also.

that leaves me with oatmeal, which i'm not a big fan of. i normally make my oatmeal with nonfat milk and splenda and i almost always never finish the oatmeal that i prepare. in my head i'm thinking, 'i bet this would make a great oatmeal 'arroz' caldo'. and tonite, i decided to give it a try and it is tasty, you have to try it!

ingredients:

half a cup of dry quaker instant oatmeal (plain of course)

1 cup of chicken broth

1/2 teaspoon of chopped ginger

1/2 teaspoon of toasted garlic bits

1 hard boiled egg

pepper

place the oatmeal, broth and ginger in a bowl and heat for 2 1/2 minutes. add your garlic bits, hard boiled egg and a little bit of pepper and you've got yourself a savory oatmeal breakfast.

i love arroz caldo ('or pospas as it's called in tanza') because it reminds me of cold january mornings and eating pospas at ate chit's little karindirya in front of SAS.

the best part of this dish is that it only has approximately 250 calories per serving. 150 calories from the oatmeal, hardboiled egg is about 70 calories, 10 calories for the fat free chicken broth (swanson is what i used) and a few calories for the garlic and ginger.

for the first time in a long time, i'm looking forward to breakfast! yum-o!!!!

hi i just found this arrozcaldo flavoured quaker aot meal at the grocery here in cagayan de oro...but anyway i love your version! i'll try it out....;-)

hi superwebsurferforcrafting! such a long name! hehe the arroz caldo is really good and quite easy to make. compare it with the one you found at the grocery store and let me know which one is tastier. =D
